Cupcakes

I made these for Timmy for Valentine's Day. They weren't as good as I'd hoped, but they were still pretty tasty.

2 cups flour*
2 teaspoons baking powder
3/4 teaspoon salt
3/4 cup milk
2 teaspoons vanilla
1 cup sugar
1 stick unsalted butter, softened
3 room temperature eggs

*The original recipe called for cake flour, which I used. I was not impressed with the final product, and I think using regular all-purpose flour would be fine.

So, sift together the flour, baking powder, and salt. (Or don't. I don't have a sifter, so I made do the best I could.) Set aside. In your mixer, cream the butter and sugar until fluffy. Then add the eggs one at a time, mixing well after each addition and scraping the bottom and sides of the bowl. Add the vanilla. Add the dry ingredients and the milk in three additions each. Preheat the oven to 350F. Line a muffin tin with cupcake papers and divide the batter. Bake for 20ish minutes, until the cupcakes are puffy but not quite brown.

In a small saucepan, heat 3/4 cup of sweetened condensed milk and six ounces of your chocolate choice. Stir till combined and drizzle over the tops of the cupcakes with a spoon. Enjoy!
